Sweet Potatoes hold over 400% of Vitamin A daily requirements in one medium spud?! Yes this is true. They do hold that much which means that it helps with vision, reproduction, bone development, etc. It has so many uses. It also gives NATURAL sugars and more nutrients with FEWER calories than regular potatoes.
GHEE-LICIOUS SWEET POTATOES
1 c. pureed sweet potatoes
(Find in freezer section @Trader Joes)
Add 1 TBLS Olive oil to sauté pan
Warm sweet potatoes in Olive oil
Top w 3-4 squares of finely chopped pineapple
(Frozen section of Trader Joes)
Drizzle 2 TBLS Ghee on top
Sprinkle w cardamom
Top with 1-2 cups veggies of choice
